Ginger which belongs to family Zingiberaceae is a plant where its rhizomes are used as a spice as well as a medicinal plant for years. It’s sensational flavour and aroma plays a major role in food and beverage industry and has a good demand in both local and international market.

Grades (basically depend on the variety)

Local - Local ginger are smaller rhizomes with a whitish fibrous flesh which have a higher taste and aroma than the other spices. Largely used in beverage industry.

Chinese - Chinese ginger are large rhizomes with pale yellowish flesh. The taste and aroma is low and usually used for pickles.

Rangoon - Rangoon ginger is a well spreaded finger rhizomes with medium size and medium aroma.
